BEETS - Candy From the Vegetable Gods

Beets (however many you'd like)
Extra Virgin Olive Oil
Fresh Ground Pepper and Kosher Salt

Pre-heat oven to 400 degrees. Wash and peel beets and then place them on a sheet of tin foil. Drizzle with olive oil and then sprinkle with salt and pepper. Fold foil over beets making a little pouch for them to roast in. Roast for 45-60 minutes - until they are tender in the center.
